Gluten Free Blueberry Waffle for One

What could be better waking up to Saturday morning than a freshly baked waffle?

I tend to be a procrastinator. At least, on Saturdays I do. Regardless of how much homework, how many chores, or even how much cleaning I have to do, I can never seem to do anything before noon on Saturday.

Usually, I’ll wake up around 8 or 9 with the purpose of running downstairs for a quick breakfast, then beginning whatever I have to do that day. Buuuttt this usually backfires, as after breakfast I look at the time and think to myself “it’s only 9:30! I have the whole day to do homework, I’m just gonna relax.”

So I turn on Grey’s Anatomy, make a cup of coffee, and four hours later I’ve gotten halfway through the season and haven’t even looked at Calculus.

Today ended up about the same: I woke up around 7:50, but didn’t actually do anything until 11 AM. Well, that’s an overstatement. What I did do was make the best Gluten Free Blueberry Waffle to wake up to!

You might be wondering, “the best Havens? Are you sure?” Well… yes! Because in my world, a recipe can only be considered the best if it’s two things: yummy and easy to make.

This waffle is definitely yummy. It’s naturally sweet, from the applesauce and blueberries, as well as completely gluten free. It’s also only 176 calories, which is less than 1/2 the calories of a classic Belgian waffle. Plus, it’s incredibly filling, as it includes only whole grains and 10 grams of protein!

Additionally, this waffle is incredibly easy to make. All you really have to do is throw all the ingredients in a blender and the next thing you know you have waffle batter. Just pour it into a waffle iron, top with blueberries, and you’re good to go!

I decided to top mine with a bit of dairy-free vanilla yogurt, strawberries, bananas, and a few more blueberries. And oh man- you really can’t get any better than that!

Gluten Free Blueberry Waffle for One

  • 1/3 c old fashioned oats
  • 1/4 c egg whites (or 1 egg)
  • 3 tbs unsweetened almond milk
  • 3 tbs natural applesauce
  • dash of cinnamon
  • 1/8 tsp baking powder
  • 3 tbs blueberries

Preheat a waffle iron. Blend oats, egg whites, almond milk, applesauce, cinnamon, and baking powder until smooth. Add 2 tbs blueberries and blend again, until smooth. Add 1 tsp gluten free flour if batter is too thin. Grease waffle iron and pour in batter. Top with remaining 1 tbs blueberries and smooth to cover the entire waffle iron. Bake for 5-7 minutes, or until your waffle iron indicates it is ready.
