Although I must admit that nothing will ever surpass my love for Christmas cookies and all things ginger and pumpkin, summer desserts definitely hold a special place in my heart.
Cobblers really are the perfect summer desserts. They can be made with whatever fruit is in season (my favorite are blueberry and peach cobblers!), and go perfectly with a big scoop of Vanilla Bean ice cream. And a cookout! 😉
Unfortunately, most people don’t have cookouts every night in the summer (only in my dreams). And without a cookout as an excuse to whip up a whole cobbler, I don’t really feel right (or healthy!) eating an entire pan of Peach Cobbler by myself. No matter how hot it is outside, and how good the dessert tastes with a cold, decadent scoop of ice cream.
But I do, however, feel perfectly fine making myself a single serving cobbler to enjoy! Or, better yet, making two mini-cobblers and enjoying one with a friend!
Or more likely, my mom. 😉
These cobblers are the perfect compromise to making an entire pan of cobbler if you’re spending the evening at home. Together, they only use one peach, so you won’t have to run to the grocery store to buy a whole box of peaches if you’re running low. However, they do include all of the classic ingredients (slightly healthified) of classic cobbler, while only taking about 5 minutes to whip up (not including cooking time, sorry folks).
The topping to this cobbler is what really makes it. It’s just as crumbly and sweet as a classic crumble topping, while only containing four easy ingredients: oats, coconut sugar, coconut oil, and vanilla. In other words, whole grains, natural sugar that won’t spike your blood sugar, blood-sugar-spike-preventing oil, and decadent vanilla.
With that in mind, it almost sounds like these cobblers are good for you.
If that’s the case, two servings are starting to look a lot like one large serving in my eyes.

Sweet Peach Cobbler for Two
- 1 large peach (sliced into small pieces)
- 2 tsp coconut sugar (or brown sugar)
- 2 tbs unsweetened almond milk
- 1/16 tsp allspice
- 1/4 c old fashioned oats
- 1 1/2 tbs coconut sugar (or brown sugar)
- 1/2 tbs coconut oil
- 1/4 tsp vanilla extract
Grease two small ramekins preheat oven to 350°F. Add coconut sugar, almond milk, and all spice to a small bowl and stir until combined. Microwave for 30 seconds. Remove and add peach slices. Stir, then microwave for another 30 seconds. Remove bowl from microwave, stir one last time, and pour mixture evenly into ramekins.
Roughly process oats (for about 10 seconds) in a food processor or blender. Pour into a bowl, then add coconut sugar, melted coconut oil, and vanilla extract. Stir until the consistency of thick bread crumbs are reached. Sprinkle on top of peach mixture in ramekins. Place in the oven and bake for 40-45 minutes, or until golden brown. Remove and let cool slightly. Enjoy!
